PORTLAND, Ore. (KOIN) — The official start of summer is this weekend, and we are expecting some hot weather.
Jenny Hansson met up with nutritionist Rania Batayneh to learn how to make her mango salsa.
5-INGREDIENT MAGO SALSA
SEASONAL FRUIT: Mangos
- High in Antioxidants
- May Boost Immunity
- May Improve hair and skin health
- 4 ripe mangoes (peeled, pitted, and diced)
- 2 small red onions (peeled and diced)
- 2 jalapenos (seeded and diced)
- ½ cup of cilantro
- Juice of 2 limes
Toss all ingredients together. Season with salt and pepper if needed.
Serve immediately or refrigerate in a sealed container for up to 2 days.
Of course, we love chips with salsa. But it also makes for the perfect side with any protein like grilled salmon or chicken.

You can also make this a complete meal by adding chickpeas to it which will bump up the fiber and add protein to the dish.
