PORTLAND, Ore. (KOIN) — A food cart on N Lombard is making sustainable, organic food accessible to everyone.
The cart came to fruition in 2014 by a group of friends who worked at Domino’s Pizza together. They opened the cart in St. Johns with the idea of making farm fresh food affordable.
“We try to use locally sourced high-end organic ingredients. So we’re trying to essentially keep it accessible to everyone, so we keep our price low on the menu, but we do pay more for the foods that we buy. So essentially we’re just taking less profit on all of our food,” co-owner Christopher Byers says.
“Organic food can be so expensive sometimes that it’s out of the reach for some people and I want to make sure that everyone has that accessibility to locally farmed, good quality food. That’s pretty much what we’re all about.”
The ‘cart’ isn’t exactly a cart. It’s a 28-foot Streamliner from 1966, giving them plenty of room to cook.
They hope to move to a more mobile cart soon so they can expand to cater events. They also dream one day of opening brick-and-mortar.
