PORTLAND, Ore. (KOIN) — It turns out it you don’t need much space to make 200 bagels per day.
Mark Salholm rolls, boils and bakes dozens of bagels every morning for his cart Puddletown Bagels. The cart opened last year in Cartlandia in Southeast Portland.
“From my customers, they tell me it’s about as close to a New York bagel as you can get in the area,” Salholm says.
Last year, he left his job as a baker at a bagel shop and started out on his own. He found the cart and gutted it, installing equipment just right for bagel baking.
His recipe has been perfected over time.
“I of course took the knowledge of baking from doing it for years. I basically tweaked this and tweaked that until I found the flavor and the texture that I wanted and that’s what we’ve been doing ever since,” he says.
He does dream of moving to brick-and-mortar one day but enjoys the food cart lifestyle and especially working surrounded by the other carts at Cartlandia.
