PORTLAND, Ore. (KOIN) — Rollin’ Fresh makes sushi rolls a little differently.
Ryan Moi wanted to come up with something unique for his cart, so he decided to serve his sushi rolls as burritos with a Latin Asian twist.
“So as a sushi burrito we don’t want to just be giant sushi rolls, we want to actually be that true fusion, so we mix it with Latin Asian fusion ingredients like ginger guac, fresco slaw, pico and salsas to make our own spin on things,” Moi said.
They also serve poke bowls.
The cart has three locations, with the newest in the Hawthorne Asylum pod in Southeast Portland. Their other locations are in Northwest and North Portland.
Moi opened the cart with his brother and the pair hope to move to brick and mortar soon. He said cart ownership has been a rewarding experience after starting off in the restaurant industry.
