PORTLAND, Ore. (KOIN) — Trap Kitchen is bringing soul food to Portland.
The idea for the carts started in Compton, California in 2013. Mikey Vegas, who runs the carts in Portland, says Instagram played a large part in the popularity of the business.
Head chef Malachi, also known as Spank, still lives in California. He started the cart with his friend as a way to get off the streets and change the path of their lives. They have locations and pop-ups throughout California and New York.
“Spank creates a lot of his new dishes on this truck. So before it goes to our other locations around the country, it’s here first,” Vegas says.
The cart just moved to a new location on NE Fremont Street, where a taco truck also owned by Trap Kitchen sits nearby. A fully vegan truck will also be opening in the small pod.
“Portland is a great city. They love food here. They’re always coming out and trying new dishes,” Vegas says.
Eventually, the business hopes to expand to brick and mortar but Vegas says they will always remain a food truck as well.
