PORTLAND, Ore. (KOIN) — Matt Olive spent years working the restaurant industry before being inspired to open a food cart.
“I just saw an opportunity, and I was like you know what, I’ll just go for it, try it out and see if it works,” he says of his start in the food cart business.
He opened the PDX Mac & Cheese Bar a few years ago and was located downtown on SW Alder Street, before being pushed out by a new development. He moved his cart to a pod on the PSU campus at the beginning of the 2018-19 school year and has been happy with his new spot.
“Definitely some of the challenges are space, finding a good location, that’s probably the biggest things. But I like it a lot, I’m going to keep doing it for a while,” he says.
He says business on PSU campus is about the same as downtown, but overall more steady because of students and staff.
He doesn’t have plans to move to brick and mortar, but rather hopes to come up with other unique and creative ideas to start another cart.
